Brazilian Flan

INGREDIENTS
- 1 cup granulated sugar
- 1 14-oz. can sweetened condensed milk
- 3/4 cup + 2 T whole milk
- 4 large eggs separated
DIRECTIONS
Melt sugar in a saucepan over low heat, stirring continuously until syrup is golden brown, about 10 minutes. Pour into a tube (or round) baking pan, swirling to coat bottom and sides with the hot syrup. Set aside to cool while preparing custard.
Process egg yolks in a blender on medium speed until thick and creamy, about 3 to 5 minutes. Add sweetened condensed milk, whole milk, and egg whites and continue processing until blended. Pour mixture into the prepared pan. Cover tightly with aluminum foil.
Set pan in a water bath (a roasting pan with boiling water poured to half the height of the baking pan) and place in an oven preheated to 350°F. Bake for 45 to 50 minutes, until a knife inserted in flan comes out clean. Cool to room temperature, then refrigerate until well chilled before unmolding on a serving plate.
