theDISH Executive Chef Ricky Heinrichs has put a fresh stamp on the menu, incorporating locally sourced ingredients and taking a made-from-scratch approach to everything from creating condiments such as roasted tomato bacon jam to house-curing corned beef in stout for Reuben sandwiches. Land and sea entrees, including Beer Braised Short Ribs and Crawfish Mac & Cheese, are complemented by casual pub-fare choices like 8-ounce Lancaster beef burgers with house-cut Belgian-style fries. Look for lively–and often unexpected–tastes among the monthly additions to the menu: Grilled Ostrich Filet, Smoked Venison Sausage and Rabbit Pot Pie have made guest star appearances.

theGLASS A collection of more than 350 familiar-to-exotic bottled beers and an ever-changing tap selection—always including a cask-conditioned brew or two—will impress avid beer hounds, and the recent introduction of fruity, hoppy and herbal infusions brings even more flavor diversity to the mix.
