theMOOD The re-envisioned blue grillhouse has emerged refreshed, revitalized and sporting a whole new attitude. Of course, an atmosphere of easy-going elegance still prevails from the mahogany-accented main dining area to the recently added fireside dining room, and a walled patio–complete with spacious outdoor bar and dramatic water-and-fire landscaping–will be unveiled in spring. While the restaurant accommodates meetings and small parties in private dining rooms, large events are hosted at the companion event center at blue.

theDISH Blue’s time-honored steakhouse fare–including prime and black angus steaks and premium seafood–has been amplified and energized by Chef Christopher Heath. Featured on the expanded menu are lusciously-topped flatbreads and composed plates of happily married flavors, such as pan roasted sea scallops with baby spinach and warm bacon-golden raisin vinaigrette. Weekly prix-fixe 3-course dinners for $29 provide value-packed variety, and lunch is now served 11 a.m. to 4 p.m. Monday through Saturday. theGLASS Master of Wine Chris Cree–a veritable rock star of the oenophile world–has assembled a stellar list that fills the glass-walled, atmosphere-controlled wine room with an exciting collection of limited run vintages unique to the Lehigh Valley. Mixed drinks, too, rise above the norm with classic and fashion-forward martinis, specialty cocktails and champagne-splashed libations. Stop by for happy hour from 5 to 7 p.m. weekdays.

theINSIDE SCOOP The new blue brunch lets you ease into Sunday with a soothing early-in-the-day cocktail in hand. The menu rounds up the best bites of breakfast and lunch, from Housemade Spiced Cider Doughnuts and Salmon Hash Benedict to Goat Cheese Tart and Steak Frites. A side of Applewood Smoked Bacon makes everything even better.
