Steak Tartare

? 16?20 oz. chopped filet mignon
? 1 egg yolk

? 2 tsp. Dijon mustard
? 4 anchovies, chopped
? 2 tsp. ketchup
? 1 tsp. Worcestershire sauce
? Dash Tabasco
? Cracked black pepper to taste
? 1/4 cup canola oil
? 2 T cognac
? 2 minced shallots
? 2 T chopped capers
? 2 T chopped cornichons (small pickled gherkins)
? Few sprigs chopped Italian parsley



Mix together all seasoning ingredients in a nonreactive bowl. Fold in chopped filet mignon. Mound in the center of plate and crack an egg yolk in the center.? Serve with gaufrettes (waffle-style potato chips), frites or toast points.
