They’ve finally joined forces to give guests the very best. Every dish and cocktail is honed to perfection—to the tune of 10-15 taste tests and trial runs—before they make it on the menu.
  • First things first: what is Cobia? It’s a fish best described as a cross between swordfish and bass that can be eaten raw or cooked. In this instance, it’s cooked and served with forbidden rice simmered in coconut milk, carrot cardamom puree, and fruity figs.
  • The Pan-Seared Scallops dish is a deliciously ritzy play on the flavor profile of a BLT. Expect an arugula and tomato salad dressed in brown butter aioli, dollops of avocado espuma (foam made in a whipped cream canister), and scallops sitting in a swirl of apple bacon jam.
