Filet Alla Moda

INGREDIENTS

? 10 oz. filet mignon
? 2 T soybean oil
? 2 T chopped red onion
? 2 red skin potatoes, cubed
? 1 cup portobello mushrooms, chopped
? 1 sprig fresh rosemary
? 1/2 cup Marsala wine
? 2 T port wine
? 2 T tomato sauce
? 2 T heavy cream
? Salt to taste
? 2 oz. Boursin cheese (optional)
? 2 oz. crabmeat, gently saut?ed in a small?pat of butter (optional)


 

DIRECTIONS

Grill steak to desired temperature (medium-rare recommended). Meanwhile, warm oil in a saut? pan, add onions and potatoes, cooking until onions start to caramelize. When potatoes begin to turn golden, add mushrooms and rosemary to pan. When mushrooms are soft, add Marsala and port to pan and simmer until liquid is reduced by half. Stir in tomato and cream, bring to a low boil and simmer gently for 2 minutes. Lay steak in pan and turn off heat. Season steak with salt to taste. Allow steak to rest in pan 2 to 3 minutes, flipping over several times so that sauce will penetrate meat. Spoon vegetables and sauce onto plate and place steak on top. If using, place a layer of Boursin cheese on steak and top with crabmeat. Serve
at once.
