Dorado Ceviche




? 4 oz. mahi mahi
? 2 T watermelon, medium diced
? 2 T cucumber, diced
? 3 oz. watermelon-chili base (see below)
? Salt and pepper to taste
? 1 T chopped chives
? 1 T chayote, fine julienne
? 5 slices toasted baguette

Watermelon-chili base:
? 2 cups lime juice
? 4 Chili de arbol peppers, toasted
? 8 oz. watermelon
? 2 T honey
? Salt and pepper to taste



In a small mixing bowl, combine together the mahi mahi, diced watermelon, cucumber, watermelon-chili base, salt, pepper and chives. Place ceviche in a dish, garnish with the chayote and serve with the toasted baguette slices.

For the watermelon-chili base: Process all ingredients in a blender. (This makes enough for
8 servings of ceviche.)
